What is The Crepe Cart? (& where'd it come from?)

 

The Crepe Cart is many things. It is a creperie on wheels. It is a fancy pancake mobile. It is a painted lady of the streets. It is a quintisenssialy french sensation. It is a pop-up kitchen outfitted for crepe making. It is a prive catering service suited for any party or wedding.

 

The Crepe Cart is also literally a rolling dream-come-true.

A dream that we, Tracy and Samantha, owners of The Crepe Cart and Partners in Culinary Craft, cooked up together two years ago.

 

It was over the piping hot grills of a creperie uptown that we spent our first years. In its compact kitchen we found friendship, laughter, and an industrious, comfortable life style. In the way that busy kitchens do, it enveloped us in that glow of a challenging job well done. As an open kitchen (visible to all) we strove for perfection in product, as well as performance and presentation, flourishing as a part of the life blood of New Orleans: the food service industry. 

 

After years of serving tides of people in shop and for countless catering events of every kind, our confidence in our abilities and appreciation of the job inspired us to new levels of work ethic and creativity to tantalize the tastebuds of all!

 

We studied the rich history of the crepe and it's many forms. We talked to crepe lovers and read blogs. We pictured the cobblestone streets of Paris winding around many fancy pancake carts.

 

We wondered, why not take it back to its roots? Why is this fair city, our NOLA,  so deeply influenced by the French lacking in this piece of culture? Let us serve crepes as they are intended- a delicious meal for the common joe. A tastey treat for the laymen lady. Street food. From a push cart.

 

So we lept to the drawing board. We scribbled out the cart from our hearts on to paper. After much searching we found a kindly engineer to build it. We cracked open our piggy banks to buy the materials. We raised dollars to shape our adorable wagon into a proper kitchen. We are all about authenticity here in our little circus. Every day we strive to create an affordable, local food option. Our goal is to one day be entirely farm to table.

 

It’s not everybody’s dream to be the odd little cart tucked between arts and crafts tents in the bustling French Quarter, trumpet music, tarot card readers, train hoppers, carriages and coffee wheeling all around you. Or alight beneath the streaming sunlight in a charming hotel brunch, but it is ours.
